I have decided to keep up the Saturday deliveries going forwards as I’d like to maintain the new customers that have been ordering for the last few weeks.
No news on markets yet but they don’t put big bucks in the governments coffers so I suspect it’s going to be a while yet!

I am now looking also at starting to produce fresh and frozen ready meals. Not sure how that’s going to look going forwards but I have put a few ideas up on the shop page although they all show sold out it will give you an idea of what is planned.

Maftoul and chicken bowl

Levantine chicken and maftoul recipe with some Spanish influences.

Ingredients

  • 1 White or brown onion

  • 1 Celery stick

  • 2 Medium carrots

  • Oil for frying e.g. sunflower or light olive

  • 1 Red pepper

  • 10g Rosemary

  • 30g Fresh parsley

  • 2 Chicken breasts – skin on or off

  • 1 Tbsp tomato purée

  • 150g[ Maftoul|http://kohlrabicatering.com/product/zaytoun-maftoul-cous-cous-palestinian-250g/]

  • 500ml Chicken stock

  • 1 Pinch saffron or substitute 1/4 tsp turmeric and 1/4 tsp paprika

  • 120g Black olives or substitute large caper berries

  • Salt and pepper to taste

Directions

  • Peel and finely dice the onion. Wash and finely dice the celery. Wash, peel and finely dice the carrots.
  • Heat 2 tablespoons of oil in a large saucepan. Add the onion, celery and carrot. Cook on low heat for 15 minutes stirring occasionally to stop over browning. Add a splash of water if required.
  • Once the veg starts cooking, de-seed and finely dice the red pepper. Finely chop the rosemary (leaves only).
  • Add chopped pepper and rosemary and carry on cooking until the 15 minutes is up. Meanwhile, wash and finely chop the parsley. Slice the chicken breasts horizontally in half, so you have 4 thinner pieces, this will ensure it cooks faster.
  • After 15 minutes, add the tomato purée to the pan. Stir for 1 minute. Add the maftoul, chicken stock, saffron and olives to the veg. Add a further 250ml of water.
  • Heat to a low to medium boil, then cook for 15 minutes or so, until the maftoul is just tender. Keep an eye on the liquid and top up with a little more water as needed. Meanwhile, season the chicken with salt and pepper.
  • Heat a layer of oil in a non-stick frying pan. Fry the chicken, for 3-4 minutes each side until golden and cooked through (no pink juices remain). Any pieces with skin on may need an extra 1 minute or so. Leave to rest until the maftoul is cooked.
  • Once cooked, season the maftoul to taste. Stir in most of the chopped parsley. Serve in wide bowls, with the chicken on top, sprinkled with the remaining parsley.

We are cooking on Fridays still and you can buy from the site….
Lots of our friends who attend markets are still cooking and delivering but to their own specific areas….
Not sure how things are going to pan out once the virus has passed so stay tuned….
Will be keeping to our cook Friday, deliver Saturday for the forseeable but also have some other ideas that I’m hoping to move forward….

For every £5 spent we are giving a ‘point’.

This will be stamped on one of our take away recyclable paper bags, we hope this will also encourage our customers to re-use these several times.

Once you have 6 points you will be able to choose an extra regular size dip or hummus to take away at no extra cost.

So £5 spent = 1 point, £10 spent = 2 points, £15 spent =3 points and so on.

Currently usable at Brampton Farmers Market, Carlisle Farmers Market, Dumfries Farmers Market and Moffat Farmers Market and online for collected orders or delivered orders over £30 (Which will qualify you for a free tub on delivery).

Don’t be fooled by the labelling…. http://kohlrabicatering.com/general/dont-be-fooled-by-the-labelling/ http://kohlrabicatering.com/general/dont-be-fooled-by-the-labelling/#comments Thu, 18 Apr 2019 07:32:08 +0000 http://kohlrabicatering.com/?p=59 So checking out the competition and I noticed that a large high end, high street retailer that sells food and clothing has a ‘houmous’ on their shelf that is ‘with extra virgin olive oil’….

Out of 10 ingredients the second ingredient is the much cheaper rapeseed oil with extra virgin olive oil being in eighth place…. in the small print it confesses olive oil…. 2.5%.

Now I’ve not checked the legals, and I’m sure this large chain won’t have fallen foul of any  food trading laws with the kind of legal power that they can afford but is it not a shade underhanded….?

The labelling gives you a feel of using much more expensive ingredients but when you check you find that this is not the case…..

Update May 2020 – When we started we had hoped to use wholly extra virgin olive oil and did so up until recently, with the recent issues with both Brexit and Corona virus it has become much easier to buy our oil from UK farmers. We now buy our oil from Borderfield who source from UK grown oil producers.

Most of our products have little or no added salt apart from natural traces present in the ingredients used, we have also opted to ensure the fat content is low, allowing the flavours of the ingredients to shine through.

 

Suitable for vegetarian, vegan, low salt, cholesterol healthy diets.

A strange yet awesome vegetable which is seldom seen outside of farm shops and allotments.

Also strange is the fact that although I chose ‘Kohlrabi’ as the company name, I’m actually producing hummus …..

That’s life…. and it’s sometimes strange…..

Adding to that however, I also produce vegetarian, vegan and gluten free foods to sell as well as a few other items since Corona Virus became a thing….
